I don’t know about you, but by the end of the week my kids are sick of cereal or Eggo waffles for breakfast.
Trying to come up with something that was halfway nutritious to feed the kid, easy and quick to make, I came up with these Nutty Banana Muffins. They fit the bill perfectly!
It’s simple and easy using only one bowl to mix it all together. Hey, I’m for anything that makes fewer dishes to wash!

Why Banana Nut Muffins are a Family Favorite
These muffins are quick and easy to grab. If someone’s running late, you can always grab a muffin to eat on the run.
Not only are they perfect for breakfast, but they work great as an after-school snack.
My kids always want the bananas when we're in the grocery store, then their interest fizzles out before they are all gone.
So why waste those brown bananas sitting on the counter? It’s such a waste to throw out perfectly good food. I’m always experimenting with recipes to use up the leftovers.
My family is a big fan of nuts in pretty much everything. Nuts are good for you, right? Great boost of protein to get the day started.
What Else Can I Put Into the Banana Nutt Muffins?
Yes, there is! The kids have known me to throw just about anything into these muffins.
Blueberries, apples, peaches, dates, raisins, cranberries, oats, and even pieces of chocolate have gone into my muffins.
There is no limit to your imagination with this banana muffin recipe.

How to make these Simply Delicious Nutty Banana Muffins
This muffin recipe is easy to make and my kids love it! It's also a great recipe to do with your kids, if they love to cook.
The nutty banana muffin recipe begins with overripe bananas. I like to use 3 bananas, but if you only have 2, that’s fine. It just won’t taste as much like banana.
Next you’ll mix with butter, no oil in this recipe. Using butter adds loads of flavor and perfectly complements the bananas. Add egg and sugar.
PRO TIP: To make the muffins moist and soft, be sure to mix your wet and dry ingredients until just mixed. Don’t beat the mixture. You want it to be slightly lumpy when placing it into the baking pan. If you over mix it, they will come out chewy.
I prefer to use muffin liners so they are easy to take out of the pan and carry on the run if needed. However, you can grease your muffin tin.
How can I Store the Muffins to Keep them Soft and Moist?
Just like most quick breads, it’s best to store them in an air-tight container. You can even freeze them for up to 6 months if you like.
Ingredients:

- Non-stick cooking spray
- 3 bananas, mashed
- ¼ c. unsalted butter, melted
- ¼ c. while milk
- 1 large egg
- 1 t. vanilla
- ½ c. brown sugar
- ½ c. sugar
- 2 c. all-purpose flour
- 1 t. salt
- 1 t. baking soda
- 1 c. walnuts, chopped + extra to top muffins before baking, if desired
Directions:

Preheat oven to 350°F. Spray a standard muffin tin with non-stick cooking spray and set aside.
Add the mashed bananas, melted butter, and milk to a large mixing bowl. Mix to combine.

Beat in the egg and vanilla, and brown sugar.
Add in the remaining dry ingredients and fold in until just mixed. Then, fold in the walnuts.

Fill muffin pan cups to about ⅘ full. Top with additional walnuts, if desired.

Ingredients

- 1 cup walnuts, leave some for the top
Instructions
1.Preheat oven to 350°F. Spray a standard muffin tin with non-stick cooking spray and set aside.
2.Add the mashed bananas, melted butter, and milk to a large mixing bowl. Mix to combine.
3.Beat in the egg and vanilla, and brown sugar.
4.Add in the remaining dry ingredients and fold in until just mixed. Then, fold in the walnuts.
5.Fill muffin pan cups to about ⅘ full. Top with additional walnuts, if desired.
6.Place in the pre-heated oven and bake for 18-20 minutes, or until toothpick inserted in the center of a muffin comes out clean. Remove from oven and cool for at least 5-10 minutes before serving. Enjoy!
